I have been in a brunch state of mind.
Who would think you could get into a brunch state of mind? As if I could just fall out of a Hamptons state of mind, through a Martha Stewart state of mind, and right into brunch, with a clang of crystal.
But here I am, caught up in the idea that fifty percent of my children in school means that I can blithely invite unsuspecting friends to my home.
Can we talk about my home, please? The elderly couple who built this house as their dream home kept it pristine condition, a perfectly beige late 70s capsule. The original carpets, every tuft babied; the walls, not a patch in sight. It was their house, and for thirty years it was loved. And now, this house is in an abusive relationship. Dry erase marker on the carpet, walls, and doors. There is crayon or pencil on the wall of every room and many surfaces--and I must confess that I haven't gotten around to cleaning it because my one regrettable lament is that every wall is textured and therefore against the 8th amendment to scrub. (Heavens knows that I don't want to be ruled unconstitutional.) The paint is chipped, and the staircase suffers from the constant up and down clattering of boys. I hope this place can take such a careless, violent love.
But out go the phone calls. Please, come over! We'll sit in the kitchen, I'll set the table, the children outside in the yard. Don't stare at the marker stains.
And what will we have? Why, caramel-apple syrup on yeasted waffles.
You HAVE to make this batter ahead and leave it for a day, it just tastes better. I always double the recipe, cool the extra waffles, and put them in a ziploc bag and freeze them. Then in the morning when I am stumbling around like Frankenstein's monster and the children are talking soloudandsofast, I throw a waffle in the microwave for a little less than a minute, and the kids are sated. This recipe is so great that the waffles are still crispy when reheated in the micro.
And GO.
*Jane is right, 3 TBL is the way to go.

I was going to ask, "What is a yeasted waffle?" And then you answered.
We toast our leftover waffles AS IF they're Eggos. But they aren't. I promise. And I cannot wait to try yeasted ones.
Someday maybe you'll give us a picture tour of the house? Maybe?
On the subject of waffles...I finally had the Belgium ones at the Provo Farmers Market and they were EXCELLENT!! Ate them plain in a napkin. I think I still dream about them. :)
YUM. I second the call for a picture tour. Or an in person tour. Whichever.
If I eat a yeasty waffle will I get a yeast infection. Also, this reminds me of that scene in Baby Mama where Greg Kinnear takes Liz Lemon (I'm cross moginating my characters here) to a vegan restaurant because he's thinks she's vegetarian but she's not and they are served a giant yeast ball which looked vile and then they laughed and went for hot dogs.
Wow, off topic.
Those waffles need to get in my mouth. I vote you host a brunch and invite me. Also, you must make macaroons because I never got one the last time you did.
Rude.
Yum. I made a little baked apple crisp goodness last night. It's all about local apples right now. This looks wonderful. I must make it.
Yes, you should invite me over for these waffles. And I will, uhh, watch your kids too.
Do you know I must be the only person in the blog-o who does not own a waffle iron? All week I am reminded that this is lame. I've picked up three recipes I'm dying to try. I've been wondering what would happen if you made a waffle pancake-style. Still good?
Yummmm....How about a blogging/old high school friends brunch...with those delectables...
Aww, man. I wish I was still in Provo so we could play together.
And I love the "soloudandsofast". That is exactly what it feels like, you're so witty. :)
Oh yeah.
Oh, that looks amazing.
I love everything about this post. Now can you come over and fix my brand new, shiny chrome wafflemaker that refuses to work properly so I can make these? Much obliged!
Grazi! waffle recipes are my favorite thing. I am getting quite a fantastic collection.
YOu are so great! i was trying to decide what to do with all my apples, and this sounds like autumn in the mouth! Thank you!
I'm gonna try it, but I'm afraid the goodness will be lost on the fam.
For the record, I don't even notice the dry erase marker on walls, or stains on rugs. All my concentration was spent on lovely conversation and DELICIOUS eats. Again, thanks for adding to my girth.
Can I just say how impressed I am that you have enough forethought and patience to prepare breakfast 24 hours in advance?
I vouch that these are Divine! Although, the next time I come over, that table cloth better be ironed!!
Suzie,
Only for two reasons:
1. I invited people over and planned what I was making for them.
2. Prepare 24 hours in advance once a week and breakfast is cooked for the rest of the week--even I can handle those odds.
It looks delicious! I am going to make that recipe and I know my family is going to love it!
As for the walls with the dry erase markers and crayons...isn't that the way they're supposed to be? That just shows it's loved by happy, artistic children.
