Spanish Tortilla

I make this thing called tortilla. Why? Because my mom made it, my abuela made it, her abuela made it (when they had oil. And when they had no oil, they ate sand.)

Chances are that if you've been to my house for breakfast or brunch, you've had a slice.

I always have people ask how to make it (along with the garlic aioli) so I put the recipe together for Marie over at Make and Takes.

It's totally authentic. It's perfect for spring, summer, or because you heart easy food. It's how we roll in EspaƱa.

How to make Spanish tortilla!

That is a gorgeous plate, seems almost a crime to eat it.

I had a roommate from Spain back in the day, and she would sometimes make us tortilla de patata. Oh, happy days!

Oh I love a Spanish Tortilla. My husband served his mission in Spain, so he brought home the know-how on that little treat. Love it.

HA HA! NO JOKE, David is on the phone with a co-worker that lives in Spain as I type. We just were joking with her that she should come live here as our Spanish nanny and make us tortillas every day.... that was honestly 30 seconds ago and then I read this. weird. Maybe it is a sign that you should be our spanish nanny. nanny embarazada.

Bad Cohen can't do lots of nightshades anymore (like potato), so we make ours with sweet potato. Try it. It's AMAZING.
